Casseroles - Beef - Tamale Pot Pie

1 lb. lean ground beef
10 oz. pkg. frozen corn
14 1/2 oz. can diced tomatoes, drained
2 oz. can sliced olives, drained
2 Tbsp. Bisquick
1 Tbsp. chili powder
2 tsp. ground cumin
1/2 tsp. salt

Topping:
1 c. Bisquick
1/2 c. cornmeal
1/2 c. milk
1 egg


In skillet, brown ground beef; drain. Add remaining ingredients and heat to boiling. Boil and stir for 1 minute. Mix topping ingredients.

Pour mixture into 9 x 9 x 2 inch casserole dish. Top with cornmeal mixture. Bake at 400° for about 25 minutes or until crust is light brown. Serves 6

High altitude: Bake 30 minutes.

2 lbs. ground chuck ( brown and drain well) 3 (10 3/4 oz.) cans cream soup (such as celery or mushroom) 3 cans milk 2 envelopes dry onion soup mix Tater Tots. ( used a 2 lb. bag) Preheat oven to 375 degrees F.Blend soup and milk together, mix well. Mix creamed soup and dry soup with the ground beef. Put into a large casserole dish. Layer the tater tots all over the top, then push down into the beef mixture. Bake at 375º till bubbly. Do not add salt, as soup will take care of it. Serves 8-10

1 lb. ground beef 1 (15 oz.) chili with beans 1 (13 1/2 oz.) jar tamales 1 (15 oz.) can whole kernel corn, drained 4 slices American cheese Preheat oven to 350 degrees F.Brown ground beef; drain. Spoon into a greased 9 inch, dish. Top with chili. Remove paper from tamales, and cut each one into 6 slices. Lay over chili. Sprinkle with corn. Lay cheese slices on top.
