Casseroles - Beef - Mexican Lasagna By Lizabeth

2 lbs. lean ground beef
2 packages dry taco seasoning
1 package large sized flour tortillas
1 (12 ounce) bag shredded Mexican cheese blend
Sour cream for garnish


Saute ground beef with taco seasonings. Divide meat mixture into thirds. Spray ovenproof casserole dish with cooking spray.

Layer casserole like lasagna: tortillas,1/3 meat mixture,1/4 shredded cheese-ending with a tortilla layer on top. Top with remaining cheese and bake in 350 oven about 45 minutes until top is crispy and cheese is melted. Serve with sour cream garnish.

1 1/2 lb. Hamburger1 onion1 (8 oz.) can tomato sauce1 (6 oz.) can tomato paste1/2 cup water1 pkg. Taco seasoning mix8 oz. Sour cream2 eggs12 flour tortillascorn chips12 oz. Shredded Monterey Jack Cheese Brown hamburger with onion. Add tomato sauce, tomato paste, and water. Stir in taco seasoning mix. Simmer about 5 minutes. In a small bowl, mix 8 oz. sour cream and eggs. Spray 9x13 pan. Layer at least three layers: Tortillas, meat mixture, sour cream, corn chips, and cheese. Bake at 350 for 45 minutes to one hour, or till browned.
