Casseroles - Beef - Mexican Casserole

1 1/2 lb. Hamburger
1 onion
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1/2 cup water
1 pkg. Taco seasoning mix
8 oz. Sour cream
2 eggs
12 flour tortillas
corn chips
12 oz. Shredded Monterey Jack Cheese


Brown hamburger with onion. Add tomato sauce, tomato paste, and water. Stir in taco seasoning mix. Simmer about 5 minutes.

In a small bowl, mix 8 oz. sour cream and eggs.

Spray 9x13 pan. Layer at least three layers: Tortillas, meat mixture, sour cream, corn chips, and cheese. Bake at 350 for 45 minutes to one hour, or till browned.

2 lbs. lean ground beef 2 packages dry taco seasoning 1 package large sized flour tortillas 1 (12 ounce) bag shredded Mexican cheese blend Sour cream for garnish Saute ground beef with taco seasonings. Divide meat mixture into thirds. Spray ovenproof casserole dish with cooking spray. Layer casserole like lasagna: tortillas,1/3 meat mixture,1/4 shredded cheese-ending with a tortilla layer on top. Top with remaining cheese and bake in 350 oven about 45 minutes until top is crispy and cheese is melted. Serve with sour cream garnish.
