Candy - Sponge - Old Fashioned Sponge Candy

1 cup dark Karo syrup
1 cup sugar
1 Tbsp. sifted baking soda
1 Tbsp. vinegar
1 lb. chocolate waters (light or dark according to taste)


Add sugar, corn syrup and vinegar to a very clean frying pan. Stir over high heat only until mixture dissolves. Continue heating without stirring until mixture reaches 300° F. Remove from heat and sprinkle baking soda onto mixture. Quickly blend baking soda into the mixture with a fork. The candy will turn yellow and expand.

Pour into a buttered 9 x 9-inch pan and allow to cool. Cut or break into pieces and dip into melted chocolate.

Makes 1 3/4 pounds.

1 cup dark corn syrup 1Tbl. vinegar 1 Tbl. Baking Soda Combine sugar,syrup and vinegar in 2 qt. bowl. Cover and microwave on High for 3 min. Stir well. Then microwaveuncovered for 4 1/2 to 10 min. until thickened. I do it 8 min. Test by dropping a small amount in cold water. It should be brittle . If not micro. a little longer.Stir in baking soda and mix well. The mixture will foam up. Pour into a greased 9" square dish. Let stand until firm. Break into pieces.

1/2 LB. Sesame Seeds(225gr) 1/4 cup brown sugar 3 T. honey Combine all the ingredients and mix well. Over low heat, heat the mixture in a heavy skillet, stirring constantly with a wooden spoon until the mixture begins to brown. Remove from heat and spread the mixture onto wax paper or a marble slab to a thickness of about 1/2". When the mixture is partially cooled and firm (not hard), cut into triangles, squares, or finger shaped candies. They shouldn't be large. Allow to harden. May be served fresh or stored in a dry container. ITALIAN SESAME SEED CANDY 1 cup
