Candy - Cherry Mash

2 cups sugar
2/3 cup evaporated milk
Dash of salt
12 large marshmallows
1/2 cup margarine
6 oz. pkg. cherry chips
2 teaspoons vanilla extract

Combine sugar, milk, salt, marshmallows and margarine in saucepan. Bring to a boil and cook for 5 minutes. Remove from heat. Add cherry chips and vanilla. Pour into 9 x 13-inch pan that has been buttered or sprayed with Pam. Refrigerate.


2 tablespoons margarine
12 oz. pkg. semisweet chocolate chips
3/4 cup peanut butter
1 cup crushed salted peanuts

Melt chocolate chips and margarine in double boiler. Simmer until melted. Remove from heat and add peanut butter and peanuts. Spread over cherry layer.

Keep refrigerated and cut into squares.

1/2 cup firmly packed brown sugar 1/2 cup granulated sugar 1 cup dark corn syrup -- (we use Golden Syrup in OZ). 1 tablespoon distilled white vinegar 1 tablespoon unsalted butter 1 tablespoon baking soda, sifted 12 oz. (375 g.) semisweet chocolate --chopped Line a 9-inch square baking pan with 2-inch sides with aluminum foil, extending the foil over the sides. Butter the foil generously. In a large, heavy, deep saucepan, combine the brown sugar, granulated sugar, corn syrup, vinegar, and butter. Stir gently over medium heat until the sugars dissolve. Clip a candy thermometer onto the side of the pan.

1 cup brown sugar 1 cup white sugar 1 cup light Karo syrup 1 cup butter (no substitutions) 1 cup whipping cream Mix 1st four ingredients and stir over medium heat. While boiling slowly add cream. Cook to 244 degrees (use a candy thermometer)- stirring constantly. Pour into buttered jelly roll pan. Refrigerate. Once set, cut and wrap individual pieces in plastic wrap. For best results, keep refrigerated.
