Candy - Candied Orange Peel
4 cups cold water1 tablespoon salt
2 cups sugar
1/2 cup water
Cut peel of each orange into fourths. Loosen pulp with bowl of spoon. Add salt to the four cups of water, add peel; weight with a plate to keep peel under water. Let stand overnight.
Drain and wash thoroughly. Cover with cold water, heat to boiling, drain. Repeat 3 times. This helps to remove the bitter taste. With kitchen scissors cut peel in strips. Cut some with tiny cookie cutters. In saucepan, combine 2 cups cut peel, sugar and 1/2 cup water.

1/2 pound dates 1 cup sugar 3/4 cups water 1/8 teaspoon cream of tarter Put each date on the end of an orange stick. Mix sugar and cream of tarter, add water, and stir over low heat until sugar is dissolved. Bring to a boil and cook until syrup threads when dropped from tip of spoon. Remove from heat. Dip each date in the syrup to cover, then place on an oiled plate to cool. It also says you can do this with 1/2 pound of shelled walnut.
