Candy - Brittle - Peanut Brittle By Marlen

2 cups sugar
1+ cups peanuts
1/2 tsp. baking soda


Prepare a 9" metal pie pan by lining with aluminum foil. Pour peanuts on the bottom to form a single layer
of nuts. In cast iron skillet, liquidify and cook sugar until lightly brown. Remove from heat and stir in baking soda. (It will bubble) Immediately pour over nuts and let cool. Break up and serve.

2 cups sugar 1 cup light corn syrup 2 cups unroasted (raw) Spanish peanuts 1/4 tsp. salt 1 tsp. butter or margarine 1/4 tsp. baking soda Slowly cook sugar, corn syrup, and 1 cup of water in a heavy skillet, stirring untill sugar has dissolved. 1 1/2 C. White Sugar 1 C. White Karo Syrup 2 C. Minimum, Raw Spanish Peanuts 3 TBS. Butter or Margarine 1 Rounded tsp. baking soda In a heavy skillet or cast iron skillet combine the sugar and Karo and bring to boil. Add peanuts and cook until light amber color. Stir in butter and turn off heat. Add soda and stir. Pour onto cookie sheet to cool.
