Candy - Beijinhos De Coco Coconut Kisses

Beijinhos de Coco (Coconut Kisses)


1 can sweetened condensed milk
2 egg yolks
1 tbsp butter or margarine
1 lb freshly grated coconut (I used 1 bag +)
1 tsp vanilla extract

Mix all ingredients well. Cook in heavy saucepan, stirring constantly, until you can see the bottom of the pan . Pour onto a plate and let cool completely. I usually wait until the next day to form the balls. Lightly grease the palm of your hands and form small balls.

(I used PAM) Roll them in poweder sugar and put in pretty paper cups. Yields about 60 kisses. ( I made them small)

NOTE: I drizzled semi-sweet chocolate over them..

4 envelopes Knox unflavored gelatine 1 (3 oz.) pkg. flavored jello 1 qt. (4 c.) boiling water Combine unflavored and flavored gelatins; add boiling water and stir until dissolved. Pour into large shallow baking pan (9 x 13 inches) and chill until firm. Cut into squares to serve.
