CARAMEL ICING

2 c. brown sugar
1/8 tsp. soda
1 tsp. vanilla
1 c. sugar
3/4 c. cream
1 egg white

Combine sugar, soda and cream. Cook, stirring constantly, until a small amount forms a soft ball when dropped into cold water. Cool to lukewarm without stirring. Beat until creamy. Add unbeaten egg white and beat until thick enough to spread. Will frost three 8-inch layers.


EASY CARAMEL ICING

1 box light brown sugar
2 c. sugar
1 stick oleo
1 c. milk

Place all in large pot and boil 2 minutes. Beat until
consistent enough to spread on cake.

16 ounces (1 box) confectioners' sugar 5 tablespoons meringue powder yellow and blue food coloring Combine confectioners' sugar, meringue powder, and 7 tablespoons water in the bowl of an electric mixer fitted wit the paddle attachment. Mix on low speed until light and fluffy and mixture comes up sides of the bowl, about 7 minutes. Divide the icing evenly among three bowls, and cover them tightly to keep them from dying. Using food coloring, tint one bowl of icing blue and one yellow; leave the remaining bowl white.

2/3-cup sugar 1/4 tsp. baking soda 1/3-cup buttermilk 2 tsp. light corn syrup Combine in saucepan. Boil over medium heat for 5 minutes. Remove from heat and add 1/2 tsp. vanilla. Pour over hot cake. (Glaze will soak into the cake.)
