Cakesandfrostings - Cup Cakes Peanut Butter

1/3 cup shortening
1/3 cup peanut butter
1 1/4 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 3/4 cups flour
1 3/4 teaspoons baking powder
1 teaspoon salt
1 cup milk
16 miniature peanut butter cups

Preheat oven to 350 degrees F.

In a mixing bowl, cream the shortening, peanut butter, and brown sugar.

Add eggs and vanilla; mix well.

Combine flour, baking powder and salt; add to creamed mixture alternately with milk.

Fill paper-lined muffin cups with 1/4 cup of batter.

Press a peanut butter cup into the center of each until top edge is even with batter.

Bake for 22-24 minutes or till toothpick inserted on an angle toward the center comes out clean.

Yield: 16 cupcakes

1 pkg. (18-1/2oz.) yellow cake mix 1 pkg. (3.4oz.) instant vanilla pudding 1 cup water 1/2 cup vegetable oil 4 eggs 1 cup mini chocolate chips white or chocolate frosting (white is prettier) extra mini chips to sprinkle Combine cake and pudding mixes in large mixing bowl, add water, oil, and eggs. Beat on low for 30 seconds. Beat on med. for 4 min. Stir in chocolate chips. Fill greased or paper-lined muffin tin with 1/4 cup batter. Bake at 375 for 18-22 min, or until toothpick is clean. When cooled frost, decorate with additional chips. Yield: about 30 cupcakes
