Buttercup Squash Coffee Cake

streusel: 1/4 cup packed brown sugar
1/4 cup sugar
1/4 cup flour
1/4 cup quick cooking oats
1/4 cup chopped nuts
1 & 1/2 tsp. cinnamon
3 Tbsp. cold butter

Cake: 1/2 cup shortening
1 cup sugar
2 eggs
1 cup mashed, cooked buttercup squash
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
1 & 1/2 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/2 cup unsweetened applesauce

Glaze: 1/2 cup 10X sugar
1 & 1/2 tsp. hot water
1/4 tsp. vanilla

Combine the first 6 ingredients in the streusel. Cut in butter until crumbly;set aside. In a mixing bowl, cream
shortening and sugar. Beat in eggs, one at a time. Beat in squash and vanilla.

Combine dry ingredients; gradually add to creamed mixture. Spoon half into a greased 9-in. springform pan. Spread applesauce over batter.

Sprinke with half of the streusel. Spoon remaining batter evenly over streusel. Top with remaining streusel. Bake at 350 for 50-55 min or until cake tests done.

Cool for 10 min; remove sides of pan. Combine glaze ingredients; drizzle over

Coffee Cake -------------------------------- 1/4 cup soft margarine 3/4 cup sugar 1 egg 1/2 cup milk 1 1/2 cups flour 2 teaspoons baking powder 1/2 teaspoon salt TOPPING: 3 tablespoons melted margarine 3/4 cup brown sugar 2 teaspoons cinnamon 1/2 cup chopped nuts 1. Cream margarine and sugar, add egg and blend well. Stir in milk. 2. Sift together flour, baking powder and salt. Add to batter; set aside. 3. Mix topping ingredients together. 4. In a greased 9x9" pan, spread ½ of the batter and sprinkle with ½ the topping. Repeat. 5. Bake at 375° for 25-30 minutes. - - -

1 1/2 cups sugar 1/4 cup strong coffee 1/4 cup light corn syrup 1 tablespoon baking soda 1 cup whipping cream, whipped 1 (8 ounce) angel food cake Combine sugar, coffee and corn syrup in a saucepan at least five inches deep. Bring mixture to a boil and cook until itreaches 310 degrees on a candy thermometer or reaches hard crack stage (when a small amount dropped into cold water breaks with a brittle snap). Press soda through a sieve to remove the lumps. Remove syrup from heat. Immediately add soda and stir vigorously just until mixture thickens and pulls away
