Cakesandfrostings - Cheesecake - Strawberry Cheesecake

Servings: 10

24 ounces cream cheese
4 eggs
1 cup strawberry pourable fruit
2 teaspoons vanilla
1 cup sour cream
1 teaspoon vanilla
1 cup sour cream
1/4 teaspoon salt
Strawberries, sliced

Preheat oven to 325 degrees F.

Beat softened cream cheese in large bowl until creamy. Blend in pourable fruit, vanilla, and salt. Add eggs, one at a time, beating well after each addition. Pour into greased 9" springform pan. Bake for 50 minutes.

Combine sour cream and vanilla; mix well. Carefully spoon over warm cheesecake. Bake another 10 minutes, or until just set.

Turn oven off and leave cheesecake in oven, with door closed for 30 minutes. Transfer to wire rack and loosen cheesecake from rim of pan. Cool overnight. Just before serving, garnish with sliced strawberries.

1-1/2 cups flaked coconut 3 tablespoons butter or margarine, melted 1 package strawberry gelatin (6-oz.) 2 cups boiling water 1 pint vanilla ice cream 2 packages cream cheese (8-oz. each), softened 1 cup whipping cream 1/2 cup flaked coconut 1 package frozen sliced strawberries (16-oz.), thawed 2 teaspoons cornstarch Combine the 1-1/2 cups coconut and the melted butter or margarine. Press into bottom of 9 x 9 x 2-inch baking pan. Bake in 325° oven for 15 minutes or till coconut is light golden brown. Cool. Dissolve gelatin in boiling water. Add ice cream, by spoonfuls, stirring until melted. Chill mixture
