Cakesandfrostings - Cake Rum

Cake:
1 package yellow cake mix
1 package (3 3/4 oz) vanilla instant pudding
4 eggs
1/2 cup cold water
1/2 cup dark rum (I think Bacardi is best)
1/2 cup vegtable oil
2 tablespoons chopped walnuts

Preheat oven to 325^. Grease and flour a 10 inch bundt pan.Spread chopped walnuts evenly over bottom of pan. Mix cake mix, pudding, eggs, water, rum and oil until smooth. Pour into prepared pan.

Bake 1 hour. Cool in pan for 25 minutes. Invert onto a serving plate. Prick top. Spoon and brush with Rum glaze (recipe follows) evenly over cake, allowing cake to absorb the glaze.

Rum Glaze:
1 stick of butter
1/4 cup of water
1 cup sugar
1/2 cup rum

In a large mixing bowl, beat together the butter and cream cheese until well blended, then beat in the sugar, eggs, and lemon rind, beating until the mixture is light and fluffy. In a separate bowl, sift together flour and baking powder, then beat this into the butter mixture.

Add carrots, nuts, pineapple, and extracts, and mix until blended. Pour into two lightly greased 9-inch round cake pans
