Cakesandfrostings - Cake Plum Cake By Elinorw

1 1/2 cups flour
1 tsp. baking powder
1/4 tsp. salt
1/2 cup corn oil
6 Tbl. sugar
2 egg whites
10-12 prune plums, pitted and quartered
2 Tbl. sugar
1/2 tsp. cinnamon


Preheat oven to 350 degrees F.

Stir the flour, baking powder, and salt together.

Beat the oil, sugar, and wgg whites together with a wisk until well blended. Stir the flour mixture into the oil mixture until thoroughly mixed.

Pat the dough into a greased 9" square baking pan, pressing dough about 1/2 inch up the sides of the pan. Arrange the plum quarters in rows on top of the dough.

Stir the sugar and cinnamon together and sprinkle over the plums. Bake at 350 for 40 minutes.

Purple Plum Cake 2 C sugar 3 eggs 2 C self-rising flour 1 tsp cinnamon 1 tsp nutmeg 1tsp allspice 1 C vegetable oil 1 jar Junior plums with tapioca 1 C chopped nuts(optional) powdered sugar Combine all ingredients and mix at medium speed. Do not overbeat. Pour batter into a greased and floured bundt pan. Bake at 350 degrees for 45-50 minutes. Cool on a rack. Invert onto cake plate and sprinkle with powdered sugar.

Plum Cake 1 cup butter 4 eggs 1 cup sugar 1 tsp. grated lemon peel 1/4 tsp. cinnamon 1 tbsp. rum (optional) 1 1/2 cups flour, sifted 1 lb. Italian plums (approx) confectioners sugar Preheat oven to 325° F.Beat butter until creamy, add eggs, sugar, lemon peel, cinnamon and rum and beat until light and fluffy. Mix in flour, blend well and spread 3/4 inch thick on a greased and floured baking tin. Cover neatly with halved plums, skin side up, and bake at 325 degrees for 20 to 25 minutes. Remove from oven, sprinkle with sugar while still warm. Serve
