Cakesandfrostings - Cake Carrot By Emily

1 1/2 cups vegetable oil
4 eggs
2 cups flour
1/2 cup pecans - chopped
1 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
3 cups finely grated carrots
Icing:
8 oz. cream cheese - softened
1 lb. powdered sugar
1 stick butter - softened
2 tsp. vanilla

Combine sugar & oil. Add eggs, mix well. Mix in flour, cinnamon, soda & salt. Slowly mix in carrots & nuts.

Pour into a greased 9X13" pan. Bake at 300 for 45-60 min. or until done.

2 c sugar 2 c flour 4 eggs 2 tsp baking powder 2 tsp baking soda 1 tsp salt 1 1/2 c oil 2 raw grated carrots 2 jars carrot baby food 2/3 c nuts Beat eggs and sugar together. Add oil and mix well. Add dry ingredients, mixing well. Add carrots, baby food and nuts. Mix well. Bake 325 for 45 to 55 min. Cool completely before frosting. Icing: 2 tbsp vanilla 8 -oz cream cheese, softened 1/2 c butter, softened 1 tsp lemon juice 1 16 oz box powdered sugar combine, mix well. Spread on cake.

3 cups shredded carrots 1 1/2 cups oil 2 cups sugar 4 eggs 2 cups flour 2 tsp. cinnamon 2 tsp. baking soda 2 tsp. baking powder 1 cup walnuts Caramel Icing (recipe below)Preheat oven to 350. Grease and flour a Bundt pan.Blend together dry ingredients; set aside. Combine oil and sugar until well-blended. Add eggs one at a time, mixing well after each. Add flour mixture and mix well. Add carrots and then walnuts. Pour into prepared Bundt pan. Bake for one hour. Caramel Icing 2 cups white sugar 2 sticks (1 cup) margarine 1 cup evaporated milk 1 tablespoon
