Cajunandcreole - Rice Red Beans And Rice By Pwhayes

1 large can red kidney beans
1/2 lb. smoked sausage (ground or cut into small pieces)
Cajun seasoning (to taste)
2 green onions, chopped fine
1 tsp. pepper
Cooked rice

Mash kidney beans except for 1 cup.

Add all ingredients except for rice to a medium size pot and bring to a boil...lower heat and simmer about 20 minutes.

Serve in bowls, topped with 2 Tbsp cooked rice
