Cajunandcreole - Rice Cajun Fried Rice

2 qt Rice, cooked, cold
1 c Salad oil
1 lb Cabbage, chunked
1/2 c Shredded carrot
1 c Diced onion
1/2 c Diced celery
1/2 c Diced bell pepper
1 Red bell pepper, diced
1/2 c Chopped scallions (tops)
1/2 c Chopped scallions (white part)
1 T Minced garlic
10 oz Ham, cubed
10 oz Chicken, cubed
8 oz Cajun sausage, cubed
1/2 c Soy sauce
1 c Peas
1 T Cajun seasoning
1 t Black pepper
2 t Salt

In a large pot of hot oil, lightly cook all the meats and vegetables (except peas) over high heat, stirring often.

Add seasoning and peas. Simmer 4-5 minutes. Saute cold rice with a little salad oil. Add fried rice garnish. Fry and stir well.

Salad:3 cups cold cooked rice 1 (15.5 ounce) can Red Beans drained 1 large tomato chopped 1/2 cup chopped green bell pepper 1/2 cup chopped red onion 1 garlic clove minced Dressing 3 tablespoons oil 3 tablespoons vinegar 2 to 3 teaspoons chili powder 1/2 teaspoon seasoned salt 1/4 teaspoon salt 1/4 teaspoon pepper 1 teaspoon Louisiana hot sauce or hot pepper sauce In large bowl, combine all salad ingredients, mix well. In small jar with tight fitting lid, combine all dressingingredients; shake well. Pour dressing over salad; toss gently to coat. Cover and refrigerate for one hour to blend flavors.

4 pounds raw rice 4 pounds red onions 1/4 cup shortening or bacon drippings 2 packages gizzards and livers Salt to taste 5 cloves garlic 3 bunches green onions 2 pods red pepper 1/4 bunch parsley 9 cups water Preheat oven to 350 degrees F.Cook rice until almost done. Cut up red onions very fine and brown in shortening. Cut up giblets and put in with onions and cook until brown. Add garlic cut very fine. Chop green onions with tops and parsley, and add to the mixture along with the salt and red pepper and water. Pour over cooked
