Cajunandcreole - Beef - Grillades

4-8 pieces frying steak
1 tbsp oil
1 tbsp butter or margarine
1 tbsp flour
6 green onions
1 clove garlic, crushed
1 tsp chopped thyme
2 tsp chopped parsley
3 tomatoes chopped, peeled and seeded
1 cup beef stock
dash of Tabasco

Place the meat between 2 sheets of plastic wrap or waxed paper and pound with a meat mallet to flatten slightly.

Heat the oil in a large frying pan and brown the meat quickly, a few pieces at a time. Set the meat aside.

Melt the butter or margarine in the frying pan and add the flour. Cut the white part off the green onions and chop it finely. Add to the flour and butter, reserving the green tops for later use. Add garlic to the pan and cook the mixture slowly, stirring frequently until it is a dark golden brown. Add the herbs, tomatoes, stock, Tabasco and salt to taste, and bring to a boil. Cook about 5 minutes to thicken and add the steaks. Cook to heat the meat through. Chop the green tops of the onions and sprinkle over the steaks to garnish.

Worcestershire saucePreheat oven to 375 degrees F.Saute the first 8 ingredients together for ten minutes. Mix together the remaining ingredients.Add sauted veggies; press into a 9" pyrex pie plate. Pour additional ketchup on top to cover meat, spread with knife to make layer on top of meat. Bake 375 for 40 minutes.

Rub spice mixture over both sides of steak. Heat a large nonstick grill pan coated with cooking spray over medium-high heat. Add steak and cook 5 minutes on each side.
