Breakfastandbrunches - Waffles Classic Malted

1 3/4 cups all-purpose flour
1/2 cup malted milk powder
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg yolk
1 3/4 cups buttermilk
1 tablespoon canola oil
1 tablespoon vanilla extract
2 large egg whites
2 tablespoons granulated sugar
confectioner's sugar (optional)

1. Preheat waffle iron. Preheat oven to 200 degrees f

2. In a mixing bowl, whisk flour, malted-milk powder, baking soda and salt.

3. In medium bowl, whisk egg yolk, buttermilk, oil, and vanilla. Whisk into dry ingredients until just moist.

4. In a clean bowl, beat egg whiteswith an electric mixer until soft peaks form. Gradually add granulated sugar,beating until glossy but not dry. Whisk one quarter of the beaten whites into the batter, then fold in remainingwhites.

5. lightly coat waffle iron with nonstick spray. Spoon in batter and cook until waffle is crisp and golden. Transferto oven to keep warm.

Dry Ingredients:1 c All-purpose flour 1 c Yellow corn meal 2 tb Sugar 3 ts Baking powder 1 t Salt Wet Ingredients:1 1/2 To 1 3/4 cups milk 2 Eggs (separated) 6 tb Liquid shortening (oil) Mix and sift dry ingredients. Add egg yolks, milk and shortening. Fold in stiffly beaten egg whites. Bake in waffle iron until done.

1 cup Buttermilk, Pancake, or Waffle mix 1/4 cup unsweetened cocoa 2/3 cup milk 2 T. oil 1 egg Sweetened Whip Cream Fresh or Frozen Fruit Or if your like us, ice cream instead of whip cream Heat waffle iron. In medium bowl, combine mix, and cocoa; blend well. Add milk, oil and eggs; stir until completelymoistened. Bake in hot waffle iron until steam stops coming out. Top with whipped cream and fresh fruit.
