3 eggs1 c sifted flour
3 tsp baking powder
1/2 tsp salt
3 tsp sugar
1/2 c buttermilk *
2 tbsp melted butter
Beat eggs on high for 2 minutes or until light and fluffy. Sift flour, baking powder, salt and sugar. Mix into eggs and beat until smooth. Stir in buttermilk and melted butter - stir until just combined, do not overmix.
Heat griddle. Use 1/4 c batter for each flapjack.
Makes about 7.
