Breakfastandbrunches - Pancakes - Oatmeal-buttermilk Pancakes

1 1/4 cups low-fat or nonfat buttermilk
1/2 cup quick-cooking oats (reg. oats also work)
1/2 teaspoon vanilla extract
1 tablespoon vegetable oil
1 large egg -- lightly beaten
1 1/4 cups all-purpose flour
2 tablespoons brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt


Combine buttermilk, oats, and vanilla; let stand 10 minutes, stirirng occasionally. Stir in oil and egg.

Lightly spoon flour into dry measuring cups; level with a knife. combine flour, brown sugar, baking soda, and salt in a large bowl. Add oat mixture to flour mixture, stirring until mixed (don't over-mix though).

Spoon about 1/3 cup batter onto a hot nonstick griddle or nonstick skillet (I sprayed with Pam). Turn pancakes when tops are covered with bubbles and edges look cooked/dry.

Yield: 4 servings (serving size: 2 pancakes). Calories 287; Fat 7g; Protein 10.1g; Carb 45g; Fiber 2.1g; Chol 55g; iron 2.5mg; sodium 509mg; calc 116mg

NOTES : Ihe batter was really thick, add a tad more buttermilk.

3 eggs 1 c sifted flour 3 tsp baking powder 1/2 tsp salt 3 tsp sugar 1/2 c buttermilk * 2 tbsp melted butter Beat eggs on high for 2 minutes or until light and fluffy. Sift flour, baking powder, salt and sugar. Mix into eggs and beat until smooth. Stir in buttermilk and melted butter - stir until just combined, do not overmix. Heat griddle. Use 1/4 c batter for each flapjack. Makes about 7.
