1 cup blue cornmeal1 cup flour
1 tsp baking powder
1/2 tsp salt (optional)
2 eggs
11/2 cups milk
Combine all dry ingredients, add the eggs and milk. Mix until all the dry ingredients are moist. Be sure not to over mix. Using an electric skillet or griddle, set the temperature at 350F, cook 3 to 4 minutes on each side.
Note: Yellow or white cornmeal can be used if blue is not available
