Breakfastandbrunches - French Toast Stuffed W Raspberry Sauce

1 loaf French bread
8 ounces cream cheese
1/2 cup chopped pecans
2 tablespoons powdered sugar
1 cup whipping cream
4 eggs
1/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla
12 ounces raspberry preserves
1/2 cup orange juice

Cut bread into 8 thick slices.

Create a pocket in each slice by inserting a knife horizontally in one side of slice and making a cut that doesn't go all way through.

Reserve prepared bread.

Mix cream cheese with pecans, cinnamon and powdered sugar.

Stuff each bread slice with a few tablespoons of cheese mixture.

In another bowl, beat eggs, whipping cream, nutmeg and vanilla.

Dip stuffed bread slices into egg mixture, coating well on both sides.

Saute bread slices in hot skillet.

Meanwhile, heat preserves and orange juice together to make sauce.

Top toast with sauce to serve.

In medium bowl, with rotary beater, beat eggswith milk, orange juice, sugar, vanilla and salt until well blended. Pour over bread. Turn slices to coat evenly. Cover and refrigerate overnight. In hot butter in skillet, saute bread until golden, about 4 minutes. Sprinkle with confectioners sugar. Makes 4 servings.
