Breakfastandbrunches - Casserole - Best Hash Brown Casserole

1lb. hot pork sausage
1lb. mild pork sausage
1 can (10 oz) cream of chicken soup
8 oz. French onion dip
8 oz. sour cream
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped **
1 cup chopped green onions
1 (30 oz) package frozen shredded hash browns, thawed
2 cups shredded cheddar cheese
salt & pepper to taste


Brown sausage, drain and set aside.

Combine the rest of the ingredients. Put half of the mixture into a greased 13x9 pan. Sprinkle with the sausage. Cover with remaining potato mixture. Bake @ 350º for 45 minutes, or until golden.

2 cups diced, cooked ham 2 pkgs. Betty Crocker hash brown potatoes 1 medium green bell pepper, chopped (1 cup) 1 Tbsp. chopped onion 2 cups shredded Cheddar cheese 3 cups milk 1 cup Bisquick mix 1/2 tsp. salt 4 eggs Grease rectangular baking dish, (13x9x2). Mix ham, potatoes, bell pepper, onion and 1 cup of the cheese. Spread in baking dish. Stir in milk, baking mix, salt and eggs until blended. Pour over potato mixture. Sprinkle with remaining 1 cup cheese. Cover and refrigerate at least 4 hours but no longer than 24 hours. Heat oven to 375 degrees. Uncover

1 1/2 dozen eggs 1/4 C. milk or cream 1 tsp. salt 1 - 10 oz. can mushroom soup 2 cans sliced mushrooms 1/4 lb. cheddar cheese Add milk and salt to eggs. Beat and scramble until soft. Don't Overcook!! Mix soup and mushrooms together. Spray a 9" x 13" casserole dish with Pam or grease with butter. Put eggs in pan and pour soup mixture over. Sprinkle grated cheese or lay slices on top. Bake at 350 for 30 minutes. Cut into squares and serve hot. Serves 8 to 10.
