Breakfastandbrunches - Casserole - Ardy's Brunch Bake

2 cups plain croutons
1 cup chopped ham
2 tablespoons chopped onion
2 tablespoons chopped green bell pepper
1 cup shredded Cheddar cheese*
6 eggs -- beaten
2 cups milk
Salt and pepper to taste


Layer croutons, ham, onions, green pepper and cheese in a 9x13-inch baking pan. Beat eggs, milk, salt and pepper together in a bowl; pour over layers. Chill, covered overnight.

Bake covered at 325 F. for 45 minutes. Bake uncovered for 15 minutes longer. Serve immediately.
Serves 6

Make the filling, by melting the butter in an ovenproof 3-qt. casserole pan over medium heat. Add the apples, sugar and cinnamon and saute until the apples begin to soften and brown lightly, then remove immediately from the heat. Make the pancake batter, place the eggs in a large bowl and beat until frothy.
