Bread - Sweet Bread Irish Tea Brack

1/2 cup dried peaches, chopped
1/2 cup apricots, chopped
1/2 cup prunes, chopped
1 cup hot strong tea
1 cup sugar
1 egg beaten
1 Tablespoon orange marmalade
1 teaspoon pumpkin pie spice
1 3/4 cup flour

Combine dried fruit and tea in a large bowl, cover and let stand over night. Add next three ingredients to the fruit mixture. Stir well. Gradually add flour mixture, mixing well. Spoon batter into greased 9 " square pan. Bake @ 350 for 35 minutes or or until wooden pick comes out clean. Serve with butter.

6 C flour 6 tsp. baking powder 1 tsp salt 2 2 1/2 C milk 1/4 C sugar (this helps brown it) Mix and knead like bread until well mixed. Break it into pieces about the size of two biscuits and flatten out by hand. Pan fry at high heat with about 1 - 2" of shortening in pan. Before frying check to see whether pan is hot enough....375F in electric skillet. Brown on one side, then torn over and brown other side.
