Bread - Sweet Bread Cranberry Nut Bread By Nikki

4 c flour
3 ts baking powder
1 ts soda
1 ts salt
2 c sugar
2 eggs, beaten
4 tb butter, melted
4 tb hot water
1 c orange juice
2 tb orange rind, grated
2 c cranberries, halved
2 c nuts, chopped


Combine dry ingredients (flour, baking powder, soda, salt and sugar) and set aside. Combine eggs, butter, water, orange juice and orange rind and beat well. Add the dry ingredients and fold in cranberries and nuts. Grease and flour TWO 9-by-4 1/2-inch loaf pans and divide batter into them. Bake at 325° for 60 minutes. Cool in pan 5 minutes, then turn out to cool. Wrap in foil or plastic wrap and store in cool place or freeze.

1 cup fresh or frozen cranberries{chopped coarsely} 1/2 cup chopped nuts 1 Tbls. orange zest 2 cups flour 1 cup sugar 1-1/2 tsp baking powder 1 ts salt 1/2 ts baking soda 2 Tbls shortening 3/4 cup orange juice 1 egg, well beaten In a bowl mix flour, sugar, baking powder, soda and salt, cut in shortening. Stir in juice, egg and zest, mix just till moistened. Fold in cranberries and nuts. pour into greased and floured 9x5x3 loaf pan and bake at 350 for about 60 minutes. {or until the toothpick test works} Cool in pan for 15 min. before
