Bread - Sweet Bread Cranberry Eggnog

3 to 3-1/2 cup flour -- divided
1/4 cup sugar
1/2 tsp salt
1 pkg active dry yeast
1/2 tsp nutmeg
1 1/4 cups eggnog
1/4 cup butter or margarine
1/2 cup dried cranberries

1 cup confectioner's sugar
1 to 2 tbl eggnog*
1/4 tsp vanilla
dash nutmeg

In mixing bowl, combine 1-1/2 cups flour, sugar, salt, yeast and nutmeg; set aside.

In a saucepan, heat eggnog and butterto 120-130 degrees ( the butter does not need to melt); add to flour mixture.

Beat on low until moistened; beat on med.for 3 min.

Stir in cranberries and enough flour to make a soft dough.

Turn onto a floured surface; knead until smooth and elastic, about 6-8 min.

Place in a greased bowl, turning to coat. Coverand let rise in warm place until doubled; about 1 hr.

Punch dough down; divide into thirds. Shape each third into a 16"rope.

Braid on a greased baking sheet; seal ends. Cover and let rise untol doubled, about 30 min.

Bake at 350 degrees for25-30 min. or golden.

Immediately remove from pan to wire rack and cool completely.

Combine the first 3 glaze ingred.and drizzle over braid. Dust with nutmeg.

1 cup fresh or frozen cranberries{chopped coarsely} 1/2 cup chopped nuts 1 Tbls. orange zest 2 cups flour 1 cup sugar 1-1/2 tsp baking powder 1 ts salt 1/2 ts baking soda 2 Tbls shortening 3/4 cup orange juice 1 egg, well beaten In a bowl mix flour, sugar, baking powder, soda and salt, cut in shortening. Stir in juice, egg and zest, mix just till moistened. Fold in cranberries and nuts. pour into greased and floured 9x5x3 loaf pan and bake at 350 for about 60 minutes. {or until the toothpick test works} Cool in pan for 15 min. before

2 whole eggs plus 2 egg whites 2 tblsp oil 3 cups sugar 1 (16 oz.) can canned pumpkin 3 3/4 cups all-purpose flour 2 tsp. baking soda 1 tsp. salt 1 1/2 tblsp pumpkin-pie spice 2 cups whole cranberries 1 cup chopped nuts Beat eggs and oil in large mixing bowl. Blend in sugar and pumpkin. In a separate bowl, stir together dry ingredients. Add to pumpkin mixture. Fold in cranberries and nuts. Pour into two greased 9X5 by 3inch loaf pans. Bake in a pre-heated oven at 350 º for 75 minutes, or until toothpick inserted
