Bread - Sweet Bread Blueberry Bread By Angel
2/3 c. shortening1 1/3 c. sugar
4 eggs
1/2 c. milk
1 1/2 tsp. lemon juice
1 c. crushed pineapple, well drained
3 c. flour
2 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
2 c. blueberries
1 c. chopped nuts (optional)
1/2 c. flaked coconut
Preheat oven to 350.
Cream shortening and sugar. Beat in eggs, milk, lemon juice and pineapple.
Beat in dry ingredients. Fold in blueberries, nuts and coconut.
Put in 3 small bread pans.
Bake for 40 to 45 minutes. Take out of pans and cool on rack.
Freezes well.
