Bread - Scones Pikelets

1 cup self-raising flour
2 tbs castor sugar
1 tsp grated lemon rind
1 egg, lightly beaten
1/3 cup sour cream
1/4 cup milk

Sift flour into mixing bowl. Stir in sugar and rind.

Add egg, cream and milk. Beat until mixture is lump-free.

Brush a non-stick fry pan with oil. Heat until warm.

Drop a tablespoon of batter in. Cook 2 minutes or until golden; turn and cook until other side is golden.

Makes 16 small or 8 larger pikelets.

3 cups Bisquick baking mix 1/2 cup raisins 1/3 cup sugar 4 eggs (reserve one) sugar Heat oven to 400. Mix baking mix, raisins, and 3 of the eggs until moistened. Turn dough onto surface well dusted with baking mix. Roll lightly in baking mix to coat. Roll dough into 9 inch circle. Cut into 12 wedges with knife dusted with baking mix. Place wedges, alternating wide and narrow ends, about 2 inches apart on ungreased cookie sheet. Beat remaining egg; brush over tops of wedges. Sprinkle with sugar. Bake until golden brown, 12 to 14 minutes.

1 3/4 c. flour 3 T. sugar 2 1/2 tsp. baking powder 2 tsp grated orange peel 1/2 cup sweet butter 1/2 cup raisins 1 egg slightly beaten 4-6 T. half and half 1 egg slightly beaten ORANGE BUTTER:1/2 cup sweet butter 2 T. orange marmalade Heat oven to 400 degrees F. In medium bowl combine flour, sugar, baking powder and orange peel. Cut 1/3 cup butter into flour mixture till ti resembles fine crumbs. Stir in raisins, egg and just enough half and half so dough leaves sides of bowl.Turn dough onto lightly floured surface, knead lightly 10 times. Roll
