Bread - Rolls - Williams Family's 60 Minute Dinner Rolls

4 1/2 to 5 cups sifted flour
1/4 cup sweet milk
1/4 cup lukewarm water
4 Tablespoons shortening
3 Tablespoons sugar
1 teaspoon salt
2 cakes or pkg. yeast

Put milk, shortening, sugar and salt in pan and heat until lukewarm. Put the yeast into the lukewarm water to dissolve it. Add the yeast mixture into the milk mixture. Add in the flour and mix until the dough is well mixed. Cover the dough mixture and let it set in a warm place for 15 minutes. Turn the dough out onto a floured board. Knead the dough until it is 1 inch thick. Make the dough out into rolls. Let the rolls rise for 15 or 20 minutes. Bake in a 350 degrees F. oven until the rolls are golden brown.

Mix together and let stand until cool:1 cup shortening 3/4 cup sugar 1 cup All-Bran cereal 1 cup boiling water 2 pkg. yeast1 cup lukewarm water1 tsp salt2 eggs beaten5 1/2 cups flourDissolve yeast in lukewarm water and add to the cooled mixture. Add salt and eggs and gradually stir in 5-1/2 cups flour. Dough will be very moist. Cover and refrigerate overnight. Make into rolls or just roll into 2 inch balls and place in greased muffin tins. Let rise for 2 to 3 hours. Bake at 350 for 12 to 15 minutes.

Bread - Sweet Rolls
3 cups warm water 1 tsp. white sugar 2 packages traditional yeast 5 to 6 cups flour 1/4 cup sugar 1 egg 1 tablespoon margarine melted In a medium bowl mix water 1 tsp. sugar and yeast, let stand for 15 minutes. In a large bowl mix flour and 1/4 cup sugar. Beat egg. Add melted margarine to egg mixture Add egg mixture to yeast mixture and stir into flour mixture. Knead for 20 minutes. Let rise until double in size. Shape into rolls place in pan and let rise again. Preheat oven to 425° F.Bake for 15 minutes.
