Bread - Quick Bread - Herbed Beer Bread

1 can beer, room temperature
1 tsp. butter, melted
2 3/4 c. all-purpose flour
2 tbsp. baking powder
Pinch of dried dill weed
1/4 tsp. oregano
1/4 tsp. thyme
2 tbsp. white sugar
1 tsp. salt

Bread Mix: In a large bowl, stir together flour, sugar, baking powder, salt, oregano, thyme and dill weed. (Pack into air tight container or bag. Mix keeps one month.)

To make bread: Place mix in large bowl, with wooden spoon, stir in beer just until flour is mixed in. Pour into greased 8 x 4 inch loaf pan. Bake at 375 degrees for 45 to 50 minutes or until crusty and golden brown. Let stand in pan for 5 minutes; turn out onto rack. Brush top with butter. Makes 1 loaf.

2-3/4 cups whole wheat flour (divided 2-1/2 + 1/4) 1-1/2 tsp. baking soda 1 tsp. salt 2 tsp. sugar 1-1/2 cups buttermilk Preheat oven to 350 degrees. Butter and flour an 8-1/2 x 4-1/2" loaf pan. In a large bowl, whisk together 2-1/2 cups of flour with baking soda, salt and sugar. Add buttermilk all at once and mix with a spoon until thoroughly combined. Add remaining 1/4 cup flour and stir until combined and dough holds together in a ball. Turn out onto lightly floured surface and gently knead with lightly floured hands to shape dough into shape of pan.

31/2 cups Bread Flour 1 tsp. Cream of Tartar 1 tsp. Baking Soda 1 tsp. salt 1 tsp. sugar 2 Tbsp. Butter 2 cups Buttermilk Set the oven to 425 Degrees. Grease and flour a baking sheet. Mix all the dry ingredients together in a bowl. lightly rub in the butter. Add the buttermilk and mix to a light, soft dough. Divide into two and shape into rounds on lightly floured surface. Place the rounds on the baking sheet and bake for about 20 minutes. Cool on wire rack
