Bread - Muffins Sweet Applets

Quantity: 12

1 1/2 cup sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 cup sugar
1/3 cup shortening
1 egg
1/3 cup milk
1 1/2 cups apple, peeled and chopped
1/2 cup butter, melted
1 cup sugar
2 tsp. cinnamon

Preheat oven to 400 degrees. Sift together the flour, baking powder, salt and nutmeg. Set aside.

Add 1/2 cup sugar gradually to shortening, creaming well. Blend in unbeaten egg; mix well. Add milk alternately with dry ingredients. Stir in pared, shredded apple.

Combine the 1 cup sugar with 2 tsp. cinnamon; set aside.

Fill well-greased muffin cups 2/3 full. Bake for 20-25 minutes until golden brown. Remove from pan.

Cool 10 minutes and dip muffins in melted butter. Immediately roll in cinnamon sugar mixture. Serve warm.

Gradually add sugar, beating until mixture is light and fluffy. Add egg and mix well. Combine dry ingredients, add to creamed mixture alternately with milk, beginning and ending with dry ingredients. Spoon into greased muffin pans and fill half full. Combine brown sugar and walnuts; sprinkle evenly over the batter. Bake at 350 for 20 minutes. makes 2 dozen.
