Bread - Muffins Seaside Orange Muffins

2 1/2 Cups flour
1 Teaspoon baking powder
1 Teaspoon soda
Sprinkle of Nutmeg
1/2 Cup oil
1 1/4 Cups buttermilk
1 Egg
1 Teaspoon vanilla
1 Cup brown sugar
1 Small seedless orange
1/2 cup chopped pecans (optional)

Preehat oven to 350.

Mix gently flour, baking powder, soda and nutmeg.

Mix (well) oil,buttermilk, egg, vanilla and brown sugar and blend gently with dry ingredients.

Using an electric food chopper, chop entire orange and fold into mixture.

Bake in a muffin pan coated with cooking spray. Bake 20-22 minutes

1 (15 oz.) box Raisin Bran cereal 1 cup oil 3 cups sugar 4 eggs, beaten 1 quart buttermilk 5 cups of flour 5 teaspoons baking powder 2 teaspoons salt Note: additional ingredients Mix together all ingredients and store in covered container until you need. Fill paper lined muffin tins 1/2 full. Bake in 400º oven for 10 minutes. This batter will keep for up 6 weeks stored in refrigerator (that is if you don't gobble it up faster). Extra raisins and nuts are optional and can be added to the batter as you use it.

4 Cups 100% Bran Cereal 2 Cups boiling water 2 Cups packed brown sugar 1 Cup vegetable oil 4 eggs, beaten 5 Cups All Purpose Flour 5 tsp. baking soda 1 tsp. salt 4 Cups Buttermilk 4 Cups Natural Bran 2 Cups Raisins Preheat oven to 350 degrees F. and grease or line muffin tin with paper liners.Combine cereal and boiling water, let cool. In large bowl, cream sugar with oil; stir in eggs. Stir together flour, baking soda and salt. Add to creamed mixture alternately with buttermilk, stirring just until combined. Stir in cereal mixture, natural bran and raisins.
