Bread - Muffins Sausage And Cheese Muffins

1/4 lb. pork sausage, cooked, drained
3 oz. cream cheese, cubed
1/2 cup cheddar cheese, shredded
1/4 cup green onion, chopped
1 cup baking mix
2 eggs, beaten
3/4 cup milk


Preheat oven to 350 degrees F.

Combine first 5 ingredients in a large bowl, making a well in center of mixture. Combine eggs and milk. Add to sausage mixture, stirring just until moistened. Spoon into greased miniature muffin pans, filling 3/4 full.

Bake at 350 degrees 35 to 40 minutes. Remove from pan immediately.

In large bowl, cream sugar with oil; stir in eggs. Stir together flour, baking soda and salt. Add to creamed mixture alternately with buttermilk, stirring just until combined. Stir in cereal mixture, natural bran and raisins.

WET INGREDIENTS:2 eggs 1/4 cup oil 3/4 cup sugar 2 cups milk 1/2 cup yoghurt or sour cream 1 teaspoon vanilla 2 cups rhubarb - finely chopped DRY INGREDIENTS: 4 cups S.R. flour 1/2 teaspoon baking powder 1/2 teaspoon cinnamon METHOD: Pre-heat oven to 200*C Grease muffin pans. Thoroughly combine all wet ingredients, lastly adding the rhubarb. Combine the dry ingredients, then fold into the wet mixture. Place into prepared muffin pans and sprinkle with cinnamon sugar and bake in pre-heated oven for 25 minutes.
