Orange Muffins

3/4 cup cooking oil
1 cup sugar
2 eggs
1 1/2 cups flour
1 teaspoon salt
1 tespoon baking powder
1 teaspoon vanilla
1/4 cup fresh orange juice
2 tablespoons grated orange rind.

Preheat oven to 350.

Combine oil, sugar and eggs. Mix well.

Add remaining ingredients. Blend.

Pour into muffin pan sprayed withnon-stick food spray. Bake for 10 to 15 minutes.

Serving Size: 1 Muffin Source: S. Hathaway 2 cups flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt (optional) 1 tablespoon orange peel, grated 1 egg 3/4 cup orange juice 1/4 cup butter/margarine 1 tablespoon skim or 1% milk 1 teaspoon vanilla Preheat oven to 400. Grease 12 muffin cups or line with paper liners; set aside. Combine dry ingredients (including orange peel) in medium bowl. Combine and add egg, orange juice, melted butter, milk, and vanilla; mix just until dry ingredients are moistened. Spoon batter into prepared cups, filling each cup 1/2 full. Bake 18-20
