Bread - Muffins - Millet Surprise Muffins

1 c millet flour
3/4 c tapioca flour
3/4 tsp baking soda
1/8 tsp unbuffered vitamin c crystals (from health food store)
1 tsp cinnamon
3/4 c apple juice concentrate, thawed
1/3 c oil
2 to 3 tbsp unsweetened all fruit jelly or jam

Mix flours, baking soda, vitamin C crystals and cinnamon. Combine juice and oil, then stir into dry ingredients until just mixed in.

Grease 12 muffin cups and dust with flour; fill about 1/3 full with batter. Add 1/2 tsp jelly or jam to the center of each cup. Top with additional batter so cups are about 2/3 full. Bake for 15 to 20 minutes at 400.

Makes 12.

Jam or jelly may be omitted. Free of wheat, gluten, milk, eggs, corn, soy, yeast, and refined sugar

2 cups all-purpose flour1 1/4 cups granulated sugar2 teaspoons cinnamon2 teaspoons baking soda1/2 teaspoon salt1 1/2 cups shredded carrots1 1/2 cups chopped apple3/4 cup coconut1/2 cup chopped pecans3 eggs, beaten1 cup vegetable oil1 teaspoon vanillaIn medium bowl, combine flour, sugar, cinnamon, baking soda and salt. In a separate bowl, toss together carrots, apples, coconut and pecans. Stir in eggs, oil and vanilla. Add dry ingredients and blend. Fill tins 3/4 full and bake 18-20 minutes in 375 degrees oven.

21 oz. Apple pie filling 3 eggs 2 teas. Apple pie spice 18 oz. yellow cake mix Beat all together with electric mixer on medium-speed. Divide batter equally between 24 paper-lined cupcake wells. Bake 350 - 25 to 30 minutes or until knife inserted comes out clean. Cool before peeling off paper lines. Source: Gloria Pitzer
