Bread - Muffins - Griswold's Bran Muffins

Muffin Spread:
1/4 cup butter
6 tablespoons brown sugar
6 tablespoons granulated sugar
2 tablespoons honey
1 tablespoon water

Cream butter, gradually beat in sugars, add honey and water and beat until fluffy. Set aside.

Muffin Batter:
1/2 cup whole wheat flour
3/4 cup cake flour
6 tablespoons sugar
1/2 teas. salt
1/2 teas. cinnamon
1/2 teas. baking soda
1/2 cup raisins
2 eggs
1/4 cup honey
1/4 cup oil
1/4 cup drained crushed pineapple
3 cups whole bran cereal
1 1/2 cups buttermilk

Combine dry ingredients, add eggs, honey, oil and buttermilk. Mix well. Fold in pineapple and bran cereal. Place 2 teaspoons of muffin spread in each muffin tin and then fill two-thirds full with batter.

Bake at 400 degrees for 18 to 20 minutes. Remove from oven and invert immediately on cooling rack.

Yield: 18 muffins.

1-1/4 cups flour (whole wheat or all purpose, whatever you like) 2 cups all-bran cereal 1/4 cup oat bran 1/4 cup sunflower seed 2 tbsp. millet 3-1/2 tsp. baking powder 1-1/4 cups skim milk or buttermilk 6 tbsp. sugar 2 tbsp. molasses 1/4 cup oil 1 egg pinch of salt Crush the cereal. Mix flour, salt, baking powder, sunflower seed and millet. Combine cereal, bran, milk, let sit about 10 minutes. Mix with sugar, molasses and egg, beat well. If mixture seems too thick add a little water. Mix with dry mixture until combined. Spoon in 12 muffin cups and
