Bread - Muffins Banana Chocolate Chip

1-3/4 cups plus 2 tablespoons flour
1/3 cup sugar
2 tablespoons unsweetened cocoa powder
1 tablespoon baking powder
1 cup mashed bananas
2/3 cup milk
1/3 cup vegetable oil
1 egg, beaten to blend
1 cup semisweet chocolate chips


Preheat oven to 425° F. and line 12-cup muffin tin with paper liners.

Combine flour, sugar, cocoa powder, and baking powder in a large bowl.

Blend in banana, milk, oil and egg until just moistened.

Mix in chocolate chips. Spoon batter into prepared tin.

Bake until tester inserted in center comes out clean, about 20 minutes.

1-1/2 cups all-purpose flour 1 cup rolled oats 1/2 cup sugar 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 2 eggs 1/4 cup cooking oil 1/4 cup buttermilk 1 cup mashed banana 1 cup wild blueberries (fresh or frozen) Preheat oven to 400 degrees. Grease or line with paper, 12 muffin cups. In a large bowl measure first 6 ingredients. Stir to mix. Make a well in centre. In a small bowl, beat eggs until frothy. Mix in cooking oil, buttermilk and bananas. Stir until about half moistened; add blueberries. Continue stirring just until completely moistened.
