Bread - Muffins Banana Chocolate Chip Muffins


1 cup Miracle Whip® or Miracle Whip Light® Dressing
1 cup Sugar
2 lg Ripe Bananas -- well mashed
2 cup Flour
2 teaspoons Baking soda
1/2 cup Mini semi-sweet chocolate chips

Heat oven to 350º F.

Mix dressing and sugar, then add bananas. Combine flour and baking soda and chips.
Mix until just moistened. Spoon batter into greased or paper-lined muffin pan, filling each cup 2/3 cup full. Bake 15 minutes.
Makes 12 muffins.

1-3/4 cups plus 2 tablespoons flour 1/3 cup sugar 2 tablespoons unsweetened cocoa powder 1 tablespoon baking powder 1 cup mashed bananas 2/3 cup milk 1/3 cup vegetable oil 1 egg, beaten to blend 1 cup semisweet chocolate chips Preheat oven to 425° F. and line 12-cup muffin tin with paper liners. Combine flour, sugar, cocoa powder, and baking powder in a large bowl. Blend in banana, milk, oil and egg until just moistened. Mix in chocolate chips. Spoon batter into prepared tin. Bake until tester inserted in center comes out clean, about 20 minutes.
