Bread - Muffins (bacon-cheddar)

1/4 C. milk
3 T vegetable oil
1 egg
3/4 C. all-purpose flour
1/4 C. shredded Cheddar cheese- (2 ounces)
1 t baking powder
1/4 t salt
3 slices bacon -- crisply cooked and crumbled
paprika or ground red pepper (cayenne)

Line 6-cup muffin ring with paper baking cups. Beat milk, oil & egg in medium bowl with fork. Stir in remaining ingredients except paprika, all at once, just until flour is moistened.

Fill each cup with scant 1/4 cup batter. Sprinkle with paprika. Microwave uncovered on high 2 to 3 minutes, rotating ring 1/4 turn every minute, until tops are almost dry & wooden pick inserted in centers comes out clean.

(Parts of muffins may appear slightly moist but will continue to cook while standing.) Immediately remove muffins from ring. Let stand uncovered on wire rack 2 minutes. Serve warm.

3 eggs 1/2 cup salad oil 1/2 cup honey 3 1/2 cup bran cereal 1 1/2 cup milk 2 1/4 cups flour 1 tea. cinnamon 4 tea. baking soda 1/2 cup raisins or chopped dried fruit, if desired In a small bowl blend together eggs, oil and honey. In a large mixing bowl combine bran with milk and let stand5 min. Add egg mixture to cereal and blend lightly. Mix in flour, cinamon and soda. Spoon into paper-lined orgreased muffin pan cups. Bake at 350 deg. for 25 to 30 minutes. Makes 16 to 18 muffins.

Cream butter and sugar. Beat in the egg. Blend in the avocado, milk and nuts. Lastly add the flour and mix gently but thoroughly until the ingredients are moistened and combined. Place in pans and sprinkle each with topping. Bake for 20 to 25 minutes. Note: Add a dash of grated lemon rind. Almonds may be toasted quickly in the microwave or in
