Bread - Hush Puppies By Phyllis

3/4 cup yellow corn meal
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/2 cup milk
1 medium onion, finely chopped

---Optional items---
1 cup Monterey Jack cheese, shredded
1 (4 0unce) can green chilies, drained and chopped
1 or 2 jalapenos, seeded and chopped
1/8 teaspoon red pepper

Combine cornmeal, flour, baking powder, salt in a mixing bowl and make a well in center, then add egg, milk and onion, stirring until moistened.

Pour oil to a depth of 3 inches into a Dutch oven and heat to 375.

Carefully drop rounded teaspoonfuls into hot oil.

Fry until golden brown, turning once, drain on paper towels.

Yield: 2 dozen

2 cups/9 oz./275 g. cornmeal preferably white 2 tbs. all purpose flour 1/2 tsp. salt 1 tsp. baking powder dash cayenne pepper (optional) 1/4 cup/1 1/2 oz./45 g. finely chopped onions 1 small clove garlic minced (optional) 1 large egg 1 cup milk about 2 cups/1 lb./500 g. lard or vegetable shortening Mix together all your dry ingredients, onion included and any other optional ingredient. Make a well in the center, drop in your egg, stir in your milk and blend well to make a nice smooth batter. Let it sit 2 minutes and then form it into teaspoon sized balls.
