5 cups flour
pinch of salt
1/2 cup vegetable shortening, chilled
about 6 tbsp. water, chilled


Combine flour and salt in a bowl. Add shortening and cut in with a pastry blender until it resembles coarse corn meal. Add just enough water to make the consistency of pie dough.

On a lightly floured surface, roll out the dough about 1/8" thick. Cut into rectangular strips about 4" long and 1/2" wide.

Bring a pot filled with 4 cups chicken stock to a boil and drop in the dough strips, a few at a time.

Now this from a recipe for chicken and dumplings so it goes on to say add boned chicken and simmer 35 to 45 minutes so you will have to adapt it if just doing dumplings.

2 cups flour 3 tsp. baking powder 1 tsp. salt 2 tbsp. minced parsley 4 tbsp. shortening 3/4 to 1 cup milk Combine flour, baking powder, salt and parsley in a bowl. Cut in the shortening until the mixture looks like coarse crumbs. Add the 3/4 cup milk and stir briefly with a fork. Add only enough of the remaining 1/4 cup milk to make the dough hold together. Drop by spoonfuls on top of the simmering broth. Cover and steam for 20 minutes without lifting the lid.
