Bread - Crumbs - Seasoned Bread Crumbs

2 cups fine dry bread crumbs(directions follow)
1/3 cup instant minced onion
2 tablespoons parsley flakes
1 tablespoon seasoned salt
1 teaspoon salt
1 teaspoon monsodium glutamate
3/4 teaspoon pepper
3/4 teaspoon Italian seasoning or mixed Italian herbs

Bread Crumbs: Both fresh and dried bread crumbs are most easily made by pulverizing bread in a blender or food processor or by tearing up by hand; dry crumbs can also be made with a rolling pin. Use unsweetened white bread without crusts for fresh crumbs. For dry crumbs, dry out the bread first in a 250 degrees F oven, and use some of the crust, if you wish. Do not use stale bread or the crumbs will have a stale taste.To prevent mold, store crumbs in the freezer, wrapped tightly in a plastic bag, where they will
keep for several weeks.

Seasoned Bread Crumbs: Mix thoroughly the 2 cups bread crumbs with all other ingredients. Store in
airtight container in cool dry place. Makes 2-1/3 cups.

1 cup water (divided) 1 pkg. dry yeast 1/4 tsp. sugar 3 cups unbleached flour (divided) 1 large egg 1 cup buttermilk 1 Tbl. potato starch 1-1/2 tsp. salt (to taste) 4 Tbl. clarified butter or peanut oil (as needed, for cooking the crumpets) The night before, proof yeast with sugar in 1/4 cup warm water in a 2 qt. measuring cup (or bowl with a spout); stir in remaining 3/4 cup water and 1 cup flour. Let stand overnight covered in a warm place. Next morning, beat in egg and buttermilk; stir in potato starch, salt and remaining 2 cups

1/2 cup Vegetable oil 2 teaspoons Mrs. Dash (or any salt-free seasoning) 4 cups Day-old french bread, cubed Heat oven to 425 degrees. Mix oil and seasoning in a large bowl until blended. Add bread cubes; toss until coated and oil is absorbed. Spread in pan and bake, stirring twice, 8 minutes or until golden brown and crisp.
