Bread - Blueberry Oatmeal

2/3 cup packed brown sugar
3/4 cup milk
1/2 cup vegetable oil
2 eggs
2-1/4 cups all-purpose flour
1 cup quick-cooking or old-fashioned oats
3 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. salt
1 cup fresh or frozen (thawed & drained) blueberries

Heat oven to 350° F. Grease bottom only of a loaf pan 8 1/2 x 4 1/2 x 2 1/2 or 9x5x3 inches.

Mix brown sugar, milk, oil, and eggs in large bowl with spoon. Stir in remaining ingredients except blueberries; beat 30 seconds. Fold in blueberries. Pour into pan. Sprinkle with additional oats if desired.

Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

2 3/4 to 3 1/4 cups bread flour divided 4 teaspoons sugar 1 package Rapid Rise yeast 1 teaspoon salt 1/2 cup water 1/2 cup nonfat peach yogurt 2 egg whites 1/3 cup dried blueberries or dried cranberries 1/3 cup chopped dried peaches In large bowl, combine 1-cup flour, sugar, yeast and salt. Heat water and yogurt until very warm (120 to 130 degrees) stir into dry ingredients. Stir in egg whites, blueberries, peaches and enough remaining flour to make soft dough. On lightly floured surface, knead until smooth and elastic 4 to 6 minutes. Cover and let rest 10 minutes.

4 cups all-purpose flour 2 cups sugar 2 Tbsp. baking powder 1/2 tsp. salt 4 eggs 2 cups milk 1 Tbsp. grated lemon peel 6 Tbsp. vegetable oil 2 cups fresh or frozen wild blueberries Preheat oven to 350 degrees. Grease and flour two 9x5" loaf pans. In a large bowl, combine flour, sugar, baking powder and salt. In a small bowl, beat eggs, add lemon peel, milk and oil until well blended. Add egg mixture to dry ingredients and stir just until moistened. Gently fold in blueberries. Pour evenly into prepared pans. Bake for 1 hour or until breads
