Bread - Abm Walnut Blue Cheese Bread

1 cup water -- plus 2 tablespoons
1-1/2 tablespoons oil
1-1/2 teaspoons salt
2-1/4 teaspoons sugar
3 tablespoons powdered milk
1 cup rye flour
2-1/4 cups bread flour
2-1/4 teaspoons active dry yeast
3 ounces blue cheese --crumbled
1/3 cup walnuts -- coarsely chopped

Place all ingredients (except for the cheese and nuts) in your machine's fully assembled pan in the order specified by your machines manufacturer.

Put the pan in the machine and select the basic/white cycle and enable your add ingredients beep function, or select the cycle that has the add ingredients beep. Press start.

When the machine beeps add the cheese and nuts. If your machine doesn't have an add ingredients function then add the cheese and nuts during the last 10 minutes of the kneading process.

2 cups kamut flour 1 cup spelt flour 3/4 tsp. sea salt 1 1/2 tbsp. vegetable oil or lecithin granules 1 1/4 cups + 1 tbsp water 3 tbsp honey or barley malt (imparts a subtle flavor) 1 1/2 tsp. yeast When the machine beeps, add 3 generous tbsp. of sesame seeds. Allergy, schmallergy, this bread is good! Many people who are allergic to wheat can tolerate kamut and spelt. Spelt is a good basic bread flour. A bread made with kamut alone is a bit too cakey. But combining spelt and kamut makes a delicious bread!
