Beansandgrains - Salad Cumin Bean Salad

1 (16 oz) can black eye peas
1 (16 oz) can pinto beans
1 (16 oz) can garbanzo beans
3/4 c balsamic vinegar
3/4 c olive oil
2 tsp ground cumin
1 clove garlic mashed
1 tsp sugar
salt and hot pepper sauce to taste
optional: finely chopped red onion

Drain and rinse beans; set aside.

In serving bowl, mix vinegar, oil, cumin, garlic, sugar and salt and pepper.

Add beans and toss gently.

Let marinate for a few hours.

Add onion if using

1 (1-lb) can each; drain well:kidney beanscut wax beansblack eyed peascut green beans, all drained. 1 medium onion, thinly sliced, and seperated into rings. DRESSING:1/2 cup sugar 1/2 cup wine vinegar 1/2 cup salad oil 1/2 teaspoon dry mustard 1/2 teaspoon dried tarragon,crushed 1/2 teaspoon dried basil, crushed 2 tablespoons snipped parsley Combine all and dressing ingredients and pour over drained vegetables. Chill several hours or overnight. Toss lightly and drain to serve. Serves 12
