3 c. cold cooked brown rice
1 can drained, rinsed pinto beans
1 can drained, rinsed black beans
1 c. frozen pean, thawed
1 medium red onion, chopped
1/2 c. drained, diced green chilies
1/4 c. cilantro, chopped
3/4 c. Italian dressing

Mix all and chill several hours before serving.

Beansandgrains - Salad Black Bean And Tomato
One (16 ounce) can black beans 2 tablespoons olive oil 2 or 3 fresh tomatoes chopped 1/2-cup fresh parsley chopped 4 to 5 cloves pressed garlic (or finely minced) 1/2 cup fresh lemon juice Drain, rinse and heat black beans. Add olive oil and bring to a slow simmer. Remove from heat and add all ingredients except lemon juice. Mix thoroughly and refrigerate for 2 hours. Add lemon juice before serving.
