Beansandgrains - Black Eyed Peas Marinated

1 #300 (15 or 16 oz) Bush's Best Blackeye Peas
1 rib celery, chopped
1 tablespoon finely chopped onion
1 tablespoon salad oil
1 tablespoon vinegar
1 tablespoon mayonnaise
1/4 teaspoon salt
Dash cayenne pepper
1 ripe tomato diced

Drain blackeye peas, rinse with cold water and drain well.

Add chopped celery and onion.

In a bowl, combine oil, vinegar, mayonnaise, salt and cayenne; mix well.

Pour over peas and stir gently.

Chill several hours or overnight.

Add diced tomato.

Mix carefully and serve immediately.

Serves: 6 Cooking time: 15 minutes 500g very young broadbeans boiling, salted water flour for coating olive oil for frying lemon wedges for serving Wash broadbeans well.
