Beansandgrains - Baked Beans By Jeannie

1 lb. Great Northern beans
pinch of soda
1 teas. salt
pepper to taste
1/2 cup brown sugar
1 tables. molasses
pinch of dry mustard
1 tables. catsup
1 onion - big chops
1/4 lb. rinsed off fat back

Preheat oven to 300-350.

Soak beans overnight. Rinse once. Cover with water and bring to a boil, add soda.

Boil till skins crack (about 1/2 hour). Drain - reserving liquid.

Add all ingredients. Add reserved liquid to cover beans - 1/2 inch over.

Bake 300-350 degrees for 2-1/2 hours. Cool. Refrigerate.

Next day - bake additional hour or so to finish. Add more reserved liquid during cooking if beans are dry.
